Tuna belly quesadillas are a crowd pleaser! Serve your family and friends our tuna belly quesadillas with tomatoes, mozzarella, and vegetables accompanied by guacamole sauce. It is sure to please!
INGREDIENTS:
- S&W tuna belly
- Olive oil
- Chopped tomatoes
- Tomato paste
- Your choice of vegetables
- Garlic powder
- Mozzarella cheese
- Herbs, like oregano and red pepper
- Tortillas
PREPARATION:
- Combine the chopped tomatoes, tomato paste, garlic, and spices in a bowl.
- Mix well, adding a dribble of olive oil and the vegetables of your choice.
- Spread the mixture onto 1/2 of a tortilla and place the S&W tuna belly on top.
- Sprinkle shredded mozzarella cheese on top of the tuna belly and fold the tortilla in half.
- Toast the closed tortilla in a non-stick pan for a few minutes on each side
AVOCADO GUACAMOLE SAUCE TO ACCOMPANY
- Smash an avocado.
- Add salt, pepper, finely chopped tomatoes, parsley, and a tablespoon of mayonnaise.
- Mix well and serve drizzled over the finished quesadillas.
