Both healthy and flavorful, tuna belly stuffed cucumbers make a fantastic, quick, and easy snack or light meal.
INGREDIENTS:
Makes 4 servings
- 2 cans of S&W tuna belly
- 2 tablespoons mayonnaise
- Cherry tomatoes, halved
- Salt to taste
- Pepper to taste
- Cucumber
- 1 tablespoon mustard
PREPARATION:
- Mix the mayonnaise, mustard, salt, and pepper in a bowl with S&W tuna belly.
- Slice a cucumber into 4 sections and hollow the center with a melon baller without cutting through the bottom.
- Fill each piece of cucumber with the mix, and top with half of a cherry tomato.
